3. Exerting pressure

Now it's time to apply pressure. Press down firmly with a steady force. A common guideline is to apply about 15-20 kg of pressure, but the most important thing is to press the coffee evenly. Avoid twisting or wobbling while pressing; steady, straight pressure is key for even extraction.


4. Check your work

Remove the temper from the filter holder and check that the coffee is neatly and evenly pressed down. There should be no visible holes or cracks. If there are, redistribute the coffee and repeat the process.
