Indonesia coffee country
Particularly on the island of Java, you will find large coffee plantations more often than anywhere else in Indonesia, thanks to the colonial history and customs of the Dutch. The four largest farms, formerly government buildings, cover more than 4,000 hectares. Java long enjoyed a great reputation for its coffee and the high price producers caught for it. To add to the price of coffee, the beans were often held back in warehouses for several weeks to months. This improved the quality of the coffee, which was a nice added benefit. In fact, in the warehouse, the coffee lost its sour flavour and resulted in a deliciously sweet aftertaste.
Much of Indonesia's coffee is Robusta, grown on large, government-run plantations at low altitudes. Arabica is grown at altitudes between 1,400 and 1,800 meters. The most commonly used drying method is the wet method.
By letting the coffee “age,” for up to five years in some cases, Indonesian coffee has a very specific sweet flavors. Once roasted, there is no acidity in the coffee, and there is an intense sharpness and woodiness in the coffee.
